MANAGEMENT & LEADERSHIP

SERVICE DIRECTOR
Orchestrates a flawless and bespoke guest experience across Restaurant Aptos, Bar Cruz, and Bar Mary. This is a hands-on service and leadership position, responsible for setting the standard of impeccable service and guiding the entire front-of-house team.

BEVERAGE DIRECTOR
Curates and oversees a distinguished beverage program across Restaurant Aptos, Bar Cruz, and Bar Mary, including the management of an exceptional cellar. This is a hands-on service role, responsible for staff education, inventory control and ensuring the seamless delivery of a sophisticated beverage experience across all venues.

BAR MANAGER
Leads the bar team with a focus on technical mastery, creativity, and precision. This position manages daily bar operations, develops an innovative cocktail program, and ensures an unparalleled level of service and engagement at the bar.

SOUS CHEF
The culinary second-in-command, responsible for assisting the Head Chef and providing leadership to the entire kitchen team.

KITCHEN

All members of our culinary brigade are expected to embody the highest standards of culinary excellence and work across Restaurant Aptos, Bar Cruz and Bar Mary to maintain a cohesive vision.
